Overnighter

From my last attempt at smoked pork shoulder I knew I had to cook overnight.  So with the long weekend I am ready to try again.

Fired up the smoker last night around 8:30 and put two rubbed shoulders on.  It's 8:00 AM now and one is at 162F and the other is at 166F.  So there is still a ways to go.  I'm thinking it might be done by noon.

One concern was smoker temp but I know from the last set of ribs that whatever setting I put the smoker at it stays there.  So when I walked out this AM to look it showed 230F - right where it was last night when I went to bed.

So it was a complete success and I can start the process earlier.  I was afraid I'd have to wake up to pull them off the smoker but turns out no worries!

The savior in all this is the iGrill and the app.  This time I put the iPhone on it, instead of the iPad, and can use the Apple Watch app to check temp.  This was handy overnight in not having to get up to check temperature - a glance at the watch let me fall right back to sleep!

This should be an awesome smoke - fresh pulled pork for lunch!
